Latin name: Hydnum repandum
The Wood Hedgehog Mushroom or Hedgehog Fungus is a wild mushroom. Its name derives from the fact that it has small soft quills under the cap instead of gills.
The Wood Hedgehog is a wild mushroom with a fleshy, slightly convex, beige to light-brown cap and a stout, creamy white stem.
Flavour and use
The flesh of the Wood Hedgehog Mushroom is firm and delicious, although it becomes slightly bitter with age. You can prepare Wood Hedgehog Mushrooms in the same way as Chanterelles.
